Ingredients

  • 1 pound ground beef
  • 2 cups diced carrots
  • 1 cup chopped onions
  • 2 cups diced potatoes
  • 1 cup chopped celery
  • 2 cups diced butternut squash
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned.
  3. Add the chopped vegetables to the skillet and stir in the spices.
  4. Pour in the beef broth and bring to a boil.
  5. Transfer the mixture to a baking dish and cover with foil.
  6. Bake in the preheated oven for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes until vegetables are tender and the dish is bubbly.

Notes

  • Feel free to substitute any fall vegetables you have on hand.
