Ingredients

- 1 pound ground beef
- 2 cups diced carrots
- 1 cup chopped onions
- 2 cups diced potatoes
- 1 cup chopped celery
- 2 cups diced butternut squash
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned.
- Add the chopped vegetables to the skillet and stir in the spices.
- Pour in the beef broth and bring to a boil.
- Transfer the mixture to a baking dish and cover with foil.
- Bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 15 minutes until vegetables are tender and the dish is bubbly.
Notes
- Feel free to substitute any fall vegetables you have on hand.
- For a spicy kick, add some chili powder or hot sauce.
