Ingredients

  • 3 pounds pot roast
  • 2 cups apple cider
  • 1 pound baby potatoes
  • 2 onions, quartered
  • 4 carrots, cut into large pieces
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat.
  3. Brown the pot roast on all sides, then remove it from the pot.
  4. Add the onions, carrots, and garlic to the pot and sauté until soft.
  5. Return the pot roast to the pot, add apple cider, thyme, salt, and pepper.
  6. Cover and transfer to the oven, cooking for 3-4 hours, until tender.
  7. Add the baby potatoes in the last hour of cooking.
  8. Serve warm.

Notes

  • For added flavor, marinate the roast overnight in apple cider.
  • Serve with crusty bread to soak up the juices.
