- 3 pounds pot roast
- 2 cups apple cider
- 1 pound baby potatoes
- 2 onions, quartered
- 4 carrots, cut into large pieces
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat.
- Brown the pot roast on all sides, then remove it from the pot.
- Add the onions, carrots, and garlic to the pot and sauté until soft.
- Return the pot roast to the pot, add apple cider, thyme, salt, and pepper.
- Cover and transfer to the oven, cooking for 3-4 hours, until tender.
- Add the baby potatoes in the last hour of cooking.
- Serve warm.
Notes
- For added flavor, marinate the roast overnight in apple cider.
- Serve with crusty bread to soak up the juices.
