  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups peeled and chopped apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs and vanilla to the butter mixture, beating well after each addition.
  5. Mix in the sour cream, then gradually add the dry ingredients, mixing until just combined.
  6. Fold in the chopped apples and transfer the batter to the prepared loaf pan.
