 - 1/2 tsp baking soda
 - 1/2 tsp salt
 - 1/2 cup unsalted butter, softened
 - 1/2 cup granulated sugar
 - 1/2 cup brown sugar
 - 1 large egg
 - 1 tsp vanilla extract
 - 1 cup grated apple
 - 1/2 cup chopped walnuts (optional)
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a bowl, mix together the flour, baking powder, baking soda, and salt.
 - In another bowl, cream the butter, granulated sugar, and brown sugar until smooth.
 - Add the egg and vanilla extract, mix until well combined.
 - Gradually add the dry ingredients to the wet ingredients, mixing thoroughly.
 - Fold in the grated apple and walnuts if using.
 - Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
 - Bake for 10-12 minutes or until lightly golden.
 - Let cookies cool before icing.

- For a richer flavor, use freshly grated apples.
