- 4 cups chicken broth
- 1 pound chicken thighs
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika

Instructions
- In a large pot, heat oil over medium heat. Add onion and garlic, sauté until translucent.
- Add chicken thighs, brown on both sides.
- Stir in rice, broth, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer until rice is cooked.
- Stir in cheese until melted, serve warm.
