Ingredients

  • 4 large poblano peppers
  • 1 cup shredded turkey bacon
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1/4 cup fresh cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup tomato sauce

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Roast the poblano peppers until the skin is charred, then place in a plastic bag to steam.
  3. Once cooled, peel the skins off the peppers and remove the seeds.
  4. In a bowl, mix the turkey bacon, cheese, onion, cilantro, garlic powder, cumin, salt, and pepper.
  5. Stuff the mixture into the peppers.
  6. Place stuffed peppers in a baking dish and top with tomato sauce.
  7. Bake for 25-30 minutes until heated through.
