- 4 large poblano peppers
- 1 cup shredded turkey bacon
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/4 cup fresh cilantro
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 cup tomato sauce
Instructions
- Preheat the oven to 375 degrees F.
- Roast the poblano peppers until the skin is charred, then place in a plastic bag to steam.
- Once cooled, peel the skins off the peppers and remove the seeds.
- In a bowl, mix the turkey bacon, cheese, onion, cilantro, garlic powder, cumin, salt, and pepper.
- Stuff the mixture into the peppers.
- Place stuffed peppers in a baking dish and top with tomato sauce.
- Bake for 25-30 minutes until heated through.
Notes
- For a spicier version, use jalapeño peppers.
- Can be made ahead and reheated before serving.
