Instructions
- Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper or a wire rack.
- Trim the ends off the zucchinis and slice into strips about 3 inches long and 1/2 inch thick.
- In a bowl, whisk the eggs with salt and pepper.
- In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
- Dip each zucchini strip into the egg mixture, then coat with the panko-Parmesan mixture, pressing to adhere.
- Arrange the coated strips in a single layer on the baking sheet.
- Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
- Serve immediately with ranch or your favorite dipping sauce.
