Ingredients

  • 1 cup crushed pistachios
  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup honey
  • 1/4 cup water
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed pistachios, graham cracker crumbs, and melted butter, then press into the bottom of a springform pan.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in vanilla extract and pour the cream cheese mixture over the crust.
  5. Bake for 45-50 minutes or until the center is set. Let cool.
  6. In a saucepan, combine honey, water, and cinnamon, simmering until thickened. Pour over the cooled cheesecake.
  7. Chill for several hours before serving.
