- 1 cup crushed pistachios
- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup honey
- 1/4 cup water
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed pistachios, graham cracker crumbs, and melted butter, then press into the bottom of a springform pan.
- In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
- Stir in vanilla extract and pour the cream cheese mixture over the crust.
- Bake for 45-50 minutes or until the center is set. Let cool.
- In a saucepan, combine honey, water, and cinnamon, simmering until thickened. Pour over the cooled cheesecake.
- Chill for several hours before serving.
