- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar (packed)
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter (softened)
- 1/2 cup chopped nuts (optional)
- 1 cup powdered sugar
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine melted butter, mashed bananas, milk, egg, and vanilla.
- Stir wet ingredients into dry until just combined. Do not overmix.
- On a floured surface, roll the dough into a rectangle.
- Spread softened butter on top, then sprinkle with brown sugar and cinnamon. Add nuts if using.
- Roll the dough tightly into a log and cut into 1-inch slices.
- Place rolls in greased dish, cut-side up, and bake for 25–30 minutes or until golden.
- In a small bowl, whisk glaze ingredients: powdered sugar, milk, and vanilla.
- Let rolls cool slightly before drizzling glaze over the top. Serve warm.

- Use very ripe bananas for the best flavor and moisture.
- Substitute almond milk and vegan butter for a dairy-free version.
- Use dental floss to cut dough cleanly without squishing the rolls.
- Let the dough rise in a warm spot to ensure fluffiness.
