Description

Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter (softened)
  • 1/2 cup chopped nuts (optional)
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine melted butter, mashed bananas, milk, egg, and vanilla.
  4. Stir wet ingredients into dry until just combined. Do not overmix.
  5. On a floured surface, roll the dough into a rectangle.
  6. Spread softened butter on top, then sprinkle with brown sugar and cinnamon. Add nuts if using.
  7. Roll the dough tightly into a log and cut into 1-inch slices.
  8. Place rolls in greased dish, cut-side up, and bake for 25–30 minutes or until golden.
  9. In a small bowl, whisk glaze ingredients: powdered sugar, milk, and vanilla.
  10. Let rolls cool slightly before drizzling glaze over the top. Serve warm.
