- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables (peas and carrots)
- 3 tablespoons Bang Bang sauce
- 2 green onions, chopped
- 2 eggs, beaten
- 1 tablespoon soy sauce
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the mixed vegetables and cook for another 2-3 minutes.
- Add the cooked rice, Bang Bang sauce, and soy sauce. Stir well to combine.
- Push the rice mixture to one side of the skillet and pour in the beaten eggs on the other side, scrambling them until fully cooked.
- Add chopped green onions and mix everything together. Cook for an additional minute.
- Serve hot and enjoy!

- For extra flavor, add garlic or ginger to the chicken while cooking.
