Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 teaspoon peppermint extract
  • 1 cup chocolate ganache, for topping
  • 1/4 cup crushed peppermint candies, for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and powdered sugar until smooth. Add vanilla, eggs, and peppermint extract, mixing until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 60-70 minutes or until the center is set and only slightly jiggly. Let cool completely.
  6. Top with chocolate ganache and garnish with crushed peppermint candies.

Notes

  • Make sure to let the cheesecake cool completely before refrigerating.
  • For a stronger peppermint flavor, increase the amount of peppermint extract.
