- 2 cups cooked shredded chicken
- 1 can white beans
- 1 can diced tomatoes
- 1 cup corn
- 1 onion chopped
- 2 cloves garlic minced
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Stir in shredded chicken, white beans, diced tomatoes, corn, chicken broth, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt to taste;
- Serve hot.
