Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the chopped apples, until just combined.
  6. Fill each muffin cup 2/3 full with batter and drizzle caramel sauce on top.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
