Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the chopped apples, until just combined.
- Fill each muffin cup 2/3 full with batter and drizzle caramel sauce on top.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
