Ingredients

- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup raisins
- 1/4 cup walnuts, chopped
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a large bowl, combine grated carrots, crushed pineapple, raisins, and walnuts.
- In a separate bowl, mix mayonnaise and lemon juice until smooth.
- Pour the dressing over the salad and mix until well combined.
- Season with salt to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made a day in advance for better flavor.
- Feel free to substitute almonds for walnuts if desired.
