These cheesecake stuffed chocolate chip cookies are the perfect blend of rich and sweet, combining the classic cookie with a creamy, cheesecake filling.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups chocolate chips
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, and salt.
- In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and blend well.
- Gradually add the dry ingredients to the wet ingredients until combined.
- Fold in the chocolate chips.
- In a separate bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth.
- Take a scoop of cookie dough, flatten it out, add a spoonful of the cream cheese mixture, and then encase it with more dough.
- Place on a baking sheet and bake for 10-12 minutes.
- Allow to cool before serving.
Notes
- For extra flavor, add a pinch of cinnamon to the cookie dough.
- Make sure the cream cheese is soft to avoid lumps.
