Description

Cheesy Baked Potato Chicken is a rich and hearty dish that combines the comforting flavors of baked potatoes and tender chicken, topped with gooey cheese.


Ingredients

  • 4 large potatoes
  • 2 cups cooked chicken, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bake the potatoes in the preheated oven until tender, about 1 hour.
  3. In a large bowl, combine the diced chicken, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper.
  4. Once the potatoes are done, cut them in half and scoop out some of the flesh, mixing it into the chicken mixture.
  5. Refill the potato skins with the chicken mixture and top with more cheese.
  6. Bake again for 15 minutes, until the cheese is melted and bubbly.

Notes

  • For extra flavor, add crispy bacon bits on top before serving.
