- 4 large potatoes
- 2 cups cooked chicken, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Bake the potatoes in the preheated oven until tender, about 1 hour.
- In a large bowl, combine the diced chicken, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper.
- Once the potatoes are done, cut them in half and scoop out some of the flesh, mixing it into the chicken mixture.
- Refill the potato skins with the chicken mixture and top with more cheese.
- Bake again for 15 minutes, until the cheese is melted and bubbly.
Notes
- For extra flavor, add crispy bacon bits on top before serving.
- This dish can be prepared a day in advance and baked before serving.
