- 4 large russet potatoes
- 2 cups shredded cheddar cheese
- 1 cup cooked, shredded chicken
- 1/2 cup sour cream
- 1/4 cup green onions, sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the russet potatoes and poke holes with a fork.
- Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender.
- Once cooked, slice the potatoes in half and scoop out some flesh into a mixing bowl.
- Add shredded chicken, sour cream, half of the cheese, green onions, and seasonings to the bowl and mix well.
- Fill the potato skins with the mixture and top with remaining cheese.
- Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with extra green onions if desired.
