Ingredients

  • 4 large russet potatoes
  • 2 cups shredded cheddar cheese
  • 1 cup cooked, shredded chicken
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes and poke holes with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender.
  4. Once cooked, slice the potatoes in half and scoop out some flesh into a mixing bowl.
  5. Add shredded chicken, sour cream, half of the cheese, green onions, and seasonings to the bowl and mix well.
  6. Fill the potato skins with the mixture and top with remaining cheese.
  7. Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly.
  8. Serve hot, garnished with extra green onions if desired.
