Description

This cheesy ground beef rice casserole is the ultimate comfort food. It’s creamy, hearty, and made with simple ingredients that come together quickly for a family-friendly dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned, about 7–8 minutes. Drain excess grease.
  3. Season beef mixture with salt, pepper, garlic powder, and paprika. Stir to combine.
  4. In a large bowl, mix cooked rice, cream of mushroom soup, milk, 1 1/2 cups shredded cheddar, and beef mixture.
  5. Spread mixture evenly into a greased 9×13-inch baking dish.
  6. Top with remaining 1/2 cup cheddar cheese.
  7. Bake uncovered for 20–25 minutes until hot and bubbly.
  8. Remove from oven, garnish with parsley if desired, and serve warm.

  • Leftover rice works best to avoid mushiness.
