Ingredients

- 4 large potatoes
- 2 cups shredded cheddar cheese
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake them for 1 hour until tender.
- In a skillet, cook the ground beef until browned, then add taco seasoning and water as per the package instructions.
- Once the potatoes are done, slice them open and fluff the insides with a fork.
- Layer the ground beef, cheese, sour cream, tomatoes, and green onions on top of the potatoes.
- Serve immediately and enjoy!
Notes
- For a vegetarian version, substitute ground beef with black beans.
- Add jalapeños for extra spice.
