Ingredients

  • 4 large potatoes
  • 2 cups shredded cheddar cheese
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake them for 1 hour until tender.
  3. In a skillet, cook the ground beef until browned, then add taco seasoning and water as per the package instructions.
  4. Once the potatoes are done, slice them open and fluff the insides with a fork.
  5. Layer the ground beef, cheese, sour cream, tomatoes, and green onions on top of the potatoes.
  6. Serve immediately and enjoy!

Notes

  • For a vegetarian version, substitute ground beef with black beans.
  • Add jalapeños for extra spice.
