A delicious and simple one-pan meal that combines cheesy goodness with the classic flavors of tacos.
Ingredients

- 1 cup rice
- 2 cups water
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 cup corn
- 1/2 cup bell pepper, chopped
- 1/2 cup onion, chopped
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add onions and bell peppers, sauté until soft.
- Stir in the ground beef and cook until browned.
- Add taco seasoning, diced tomatoes, corn, and water, bring to a boil.
- Stir in the rice, cover, and reduce heat; simmer for 20 minutes.
- Remove from heat and stir in cheese until melted.
- Serve hot and enjoy your cheesy taco rice skillet dinner!
Notes
- You can use chicken or turkey instead of beef.
- For added spiciness, include jalapeños.
