Ingredients

- 1 pound chicken, diced
- 4 cups chicken broth
- 2 cups water
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 2 cups biscuit dough
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- In a large pot, combine chicken, chicken broth, water, carrots, celery, and onion.
- Bring to a boil, then reduce heat and simmer until chicken is cooked through.
- Add dumpling dough by spoonfuls on top of the soup.
- Cover and cook for about 15 minutes or until dumplings are fluffy.
- Season with salt, pepper, and thyme before serving.
Notes
- This soup can be made ahead of time and reheats well.
- For added flavor, use leftover chicken.
