Ingredients

  • 1 pound chicken, diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cups biscuit dough
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. In a large pot, combine chicken, chicken broth, water, carrots, celery, and onion.
  2. Bring to a boil, then reduce heat and simmer until chicken is cooked through.
  3. Add dumpling dough by spoonfuls on top of the soup.
  4. Cover and cook for about 15 minutes or until dumplings are fluffy.
  5. Season with salt, pepper, and thyme before serving.

Notes

  • This soup can be made ahead of time and reheats well.
  • For added flavor, use leftover chicken.
