Description

A comforting and nutritious soup packed with chicken, mushrooms, and wild rice.


Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces mushrooms, sliced
  • 1 cup wild rice, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Add garlic and mushrooms, cooking until mushrooms are tender.
  3. Stir in diced chicken and cook until no longer pink.
  4. Add wild rice, chicken broth, water, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until rice is tender.
  6. Season with salt and pepper to taste.

Notes

  • For added creaminess, stir in a splash of heavy cream before serving.
