A comforting and nutritious soup packed with chicken, mushrooms, and wild rice.
Ingredients

- 1 pound chicken breast, diced
- 8 ounces mushrooms, sliced
- 1 cup wild rice, rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
- Add garlic and mushrooms, cooking until mushrooms are tender.
- Stir in diced chicken and cook until no longer pink.
- Add wild rice, chicken broth, water, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 45 minutes, or until rice is tender.
- Season with salt and pepper to taste.
Notes
- For added creaminess, stir in a splash of heavy cream before serving.
- This soup can be made in advance and stored in the fridge for a quick meal.
