Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
- Add mushrooms and garlic, cooking until mushrooms are tender.
- Stir in wild rice, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Add chicken breasts; reduce heat, cover, and simmer for 30-40 minutes, or until chicken is cooked through.
