Description

A rich and flavorful chicken scampi served with savory garlic parmesan rice.


Ingredients

  • 1 pound chicken breast, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1 cup uncooked rice
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add minced garlic and red pepper flakes, cooking until fragrant.
  3. Pour in chicken broth and bring to a simmer. Stir in rice and cover the skillet.
  4. Cook according to rice package instructions until the rice is tender.
  5. Stir in parmesan cheese and chopped parsley. Season with salt and black pepper.
