Ingredients

- 1 pound chicken breast, diced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 cup chicken broth
- 1 cup uncooked rice
- 1/2 cup grated parmesan cheese
- 2 tablespoons parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
- Add minced garlic and red pepper flakes, cooking until fragrant.
- Pour in chicken broth and bring to a simmer. Stir in rice and cover the skillet.
- Cook according to rice package instructions until the rice is tender.
- Stir in parmesan cheese and chopped parsley. Season with salt and black pepper.
- Serve hot and enjoy!
Notes
- For added flavor, marinate chicken in lemon juice before cooking.
- Substitute cauliflower rice for a low-carb option.
