Description
Delightful and easy-to-make chocolate covered mint patties that are perfect for any occasion.
Ingredients

			- 1 cup powdered sugar
 - 1/4 cup unsweetened cocoa powder
 - 1/4 cup butter, softened
 - 1/2 tsp peppermint extract
 - 8 oz semi-sweet chocolate, chopped
 
Instructions
- In a mixing bowl, combine powdered sugar, cocoa powder, and softened butter.
 - Add peppermint extract and mix until smooth.
 - Shape the mixture into small patties and place them on a baking sheet.
 - Chill in the refrigerator for about 30 minutes.
 - Melt the semi-sweet chocolate in a double boiler.
 - Dip each patty in the melted chocolate and return to the baking sheet.
 - Allow to set before serving.
 
Notes
- For a variation, try adding a few drops of food coloring to the mixture for a festive look.
