- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 1 cup semisweet chocolate chips
- 1 cup fresh raspberries
- 1 cup heavy cream
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a pie pan to form the crust.
- Bake the crust for 10 minutes, then let it cool.
- In a saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.
- In a separate bowl, whisk together the sugar, eggs, and vanilla.
- Slowly add the chocolate mixture to the egg mixture, whisking continuously until fully combined.
- Pour the filling into the prepared crust, then scatter the fresh raspberries on top.
- Bake in the oven for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
- For an extra touch, garnish with whipped cream and additional fresh raspberries.
