Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup semisweet chocolate chips
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a pie pan to form the crust.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.
  5. In a separate bowl, whisk together the sugar, eggs, and vanilla.
  6. Slowly add the chocolate mixture to the egg mixture, whisking continuously until fully combined.
  7. Pour the filling into the prepared crust, then scatter the fresh raspberries on top.
  8. Bake in the oven for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
  9. Let cool, then refrigerate for at least 2 hours before serving.

Notes

  • For an extra touch, garnish with whipped cream and additional fresh raspberries.
  • This pie can be made a day in advance for best flavor!
