Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Drop spoonfuls of batter onto the prepared baking sheet.
  7. Bake for 10-12 minutes, then let cool completely.
  8. Spread raspberry jam on half of the cookies, then top with the remaining cookies.
  9. In a bowl, mix powdered sugar and milk to create a frosting, then spread on the whoopie pies.
