- 2 cups mixed dried fruit
- 1 cup walnuts, chopped
- 1/2 cup orange juice
- 1 cup brown sugar
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup butter, softened
- 3 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the dried fruit with orange juice and let it soak for 30 minutes.
- In another bowl, cream the butter and brown sugar until fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, then fold in the soaked fruit and walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- For extra flavor, add zested orange or lemon.
- Make sure to let the cake cool completely before wrapping.
