- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices turkey bacon, chopped
- 2 cups red wine
- 1 cup beef broth
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, brown the beef pieces on all sides.
- Add the carrots, onion, and garlic, and cook for a few minutes until softened.
- Stir in the tomato paste, thyme, and bay leaf.
- Pour in the red wine and beef broth, bringing it to a simmer.
- Return the turkey bacon to the pot.
- Cover and place in the oven. Cook for 2-3 hours until the beef is tender.
- Season with salt and pepper before serving.
Notes
- For a richer flavor, use a full-bodied red wine.
- Serve with crusty bread or mashed potatoes.
