- 2 pounds beef chuck, cut into cubes
- 4 ounces turkey bacon, diced
- 2 cups red wine
- 1 cup beef broth
- 2 tablespoons tomato paste
- 4 garlic cloves, minced
- 1 large onion, chopped
- 2 carrots, sliced
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the bacon drippings, brown the beef cubes on all sides. Remove beef and set aside.
- Add onions, carrots, and garlic to the pot, cooking until softened.
- Stir in the flour and mix well.
- Add tomato paste, wine, beef broth, thyme, and bay leaves; bring to a boil.
- Return beef and turkey bacon to the pot, then cover and transfer to the oven.
- Braise in the oven for about 2.5 to 3 hours, until the beef is tender.
- Season with salt and pepper before serving.
Notes
- Serve with crusty bread or mashed potatoes for a complete meal.
- This dish can be made a day ahead for improved flavors.
