  • ¼ cup unsalted butter, melted
  • 1 cup smoked Gouda cheese, shredded
  • 2 tablespoons honey

  • Additional honey for drizzling

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions and grease it lightly with cooking spray or melted butter.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Gradually mix the wet ingredients into the dry mixture until just combined. Avoid overmixing.
  5. Fold in the shredded smoked Gouda cheese and honey until evenly distributed.
  6. Using a tablespoon or cookie scoop, spoon portions of the batter onto the preheated waffle iron.
  7. Cook each batch for 2–4 minutes or until golden brown and crisp at the edges.
  8. Transfer cooked waffle bites to a wire rack to cool slightly and maintain crispness.
  9. Repeat until all batter is used, greasing the waffle iron as needed.
  10. Serve warm or at room temperature. Drizzle with additional honey and sprinkle chives if desired.
