- 1 pound crab meat
- ½ cup breadcrumbs
- 1 egg
- ¼ cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1 carrot, grated
- 1 green onion, chopped
- 12 egg roll wrappers
- Oil for frying
Instructions
- In a bowl, combine crab meat, breadcrumbs, egg, mayonnaise, mustard, Worcestershire sauce, Old Bay seasoning, carrot, and green onion. Mix well.
- Lay an egg roll wrapper on a flat surface with a corner pointing towards you.
- Place 2 tablespoons of the crab mixture near the corner closest to you.
- Fold the corner over the filling, then fold in the sides and roll tightly.
- Seal the edge with a bit of water.
- Heat oil in a deep pan. Fry the rolls until golden brown.
- Remove and drain on paper towels.
- Serve hot with your choice of dipping sauce.
