Ingredients

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, cranberries, cream cheese, mozzarella, garlic powder, onion powder, salt, and pepper.
  3. Carefully cut a pocket into each chicken breast and stuff with the cranberry and spinach mixture.
  4. Heat olive oil in a skillet over medium heat. Brown the stuffed chicken breasts on both sides for about 3-4 minutes.
  5. Transfer chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
