- 4 chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the spinach, cranberries, cream cheese, mozzarella, garlic powder, onion powder, salt, and pepper.
- Carefully cut a pocket into each chicken breast and stuff with the cranberry and spinach mixture.
- Heat olive oil in a skillet over medium heat. Brown the stuffed chicken breasts on both sides for about 3-4 minutes.
- Transfer chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
