- 1 pork loin roast
- 1 cup cranberry sauce
- 2 tablespoons Dijon mustard
- 1 cup apple cider
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- salt to taste

Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add cranberry sauce, Dijon mustard, and apple cider. Stir until combined.
- Season the pork loin with salt and pepper, then sear in the same pan until browned.
- Place the pork in a baking dish and pour the glaze over it.
- Bake in the oven for 1 hour or until the internal temperature reaches 145°F (63°C).
- Let it rest before slicing and serving.
