- 4 medium zucchini
- 8 ounces burrata cheese
- 1 cup cherry tomatoes
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh basil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini lengthwise and scoop out the middle to create noodles.
- In a bowl, mix burrata cheese with minced garlic, salt, and pepper.
- Fill each zucchini slice with the burrata mixture.
- Place the stuffed zucchini in a baking dish.
- In a saucepan, heat olive oil and sauté cherry tomatoes until they blister.
- Pour the tomato glaze over the zucchini rolls.
- Bake for 25 minutes until the zucchini is tender.
- Garnish with fresh basil before serving.
Notes
- For extra flavor, feel free to add Italian herbs to the tomato glaze.
