  • 4 medium zucchini
  • 8 ounces burrata cheese
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise and scoop out the middle to create noodles.
  3. In a bowl, mix burrata cheese with minced garlic, salt, and pepper.
  4. Fill each zucchini slice with the burrata mixture.
