Ingredients

  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt to taste

Instructions

  1. In a large mixing bowl, combine the black beans, corn, red bell pepper, green bell pepper, jalapeño, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, cumin, garlic powder, and salt.
  3. Pour the dressing over the vegetable mixture and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
