- 4 boneless chicken breasts
- 2 cups baby potatoes
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt butter over medium heat. Add chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side.
- Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Stir in heavy cream and Italian seasoning; bring to a simmer.
- Return chicken to the skillet, cover, and simmer for 10-15 minutes until cooked through.
- While the chicken is cooking, toss baby potatoes with olive oil, salt, and pepper, and place on a baking sheet.
- Roast potatoes in the oven for 20-25 minutes, or until golden and tender.
- Serve chicken hot, drizzled with the creamy sauce and garnish with parsley, alongside roasted baby potatoes.
Notes
- For extra flavor, you can add parmesan cheese to the sauce.
- Feel free to substitute chicken with fish or shrimp.
