- 4 boneless, skinless chicken breasts
- 2 cups fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, place the chicken breasts and season with garlic powder, salt, and black pepper.
- Drizzle olive oil over the chicken and bake for 20 minutes.
- Remove from the oven and top with mozzarella cheese, cherry tomatoes, and basil leaves.
- Drizzle balsamic vinegar over everything and return to the oven for an additional 10-15 minutes until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- For extra flavor, marinate chicken in balsamic vinegar for 30 minutes before baking.
- Serve with a side of crusty bread to soak up the juices.
