Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the mushrooms and cook until they release their moisture and turn golden brown.
  3. Pour in the vegetable broth and bring to a simmer. Cook for 15 minutes.
  4. Stir in the heavy cream and thyme, then season with salt and pepper. Cook for another 5 minutes.
  5. Use an immersion blender to puree the soup until smooth. Serve warm.

Notes

  • This soup can be made ahead of time and reheated when ready to serve.
