- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper, to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
- Add the mushrooms and cook until they release their moisture and turn golden brown.
- Pour in the vegetable broth and bring to a simmer. Cook for 15 minutes.
- Stir in the heavy cream and thyme, then season with salt and pepper. Cook for another 5 minutes.
- Use an immersion blender to puree the soup until smooth. Serve warm.
Notes
- This soup can be made ahead of time and reheated when ready to serve.
- For added flavor, sauté some additional mushrooms for garnish.
