Ingredients

  • 1 pound Italian sausage
  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups chopped carrots
  • 1 tablespoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add in the onions and garlic, cooking until onions are translucent.
  3. Stir in the diced potatoes, carrots, and thyme; cook for 2-3 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream, and season with salt and pepper; simmer for an additional 10 minutes.
  6. Serve warm and enjoy!

Notes

  • This stew can be made a day in advance for better flavor.
