Ingredients

- 1 pound Italian sausage
- 4 cups diced potatoes
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups chopped carrots
- 1 tablespoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add in the onions and garlic, cooking until onions are translucent.
- Stir in the diced potatoes, carrots, and thyme; cook for 2-3 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in the heavy cream, and season with salt and pepper; simmer for an additional 10 minutes.
- Serve warm and enjoy!
Notes
- This stew can be made a day in advance for better flavor.
- Adjust the consistency by adding more or less broth.
