Ingredients

- 1 pound Italian sausage
- 4 cups diced potatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- In a large pot, brown the Italian sausage over medium heat until cooked through.
- Add the onions and garlic, sautéing until translucent.
- Stir in the diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Mix in the heavy cream and kale, cooking until the kale is wilted.
- Season with salt, black pepper, and thyme before serving.
Notes
- For extra flavor, add a splash of white wine when cooking the sausage.
- This stew can be made ahead and tastes even better the next day.
