- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup heavy cream
- 1 tablespoon vanilla extract
- 1 cup chopped pecans
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the heavy cream, and mix until just combined.
- Fold in the chopped pecans.
- Pour the batter into a greased cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool before topping with caramel and additional pecans.
Notes
- For an extra touch, brûlée the top with sugar after adding caramel.
- Use fresh pecans for the best flavor.
