Description
Crispy cheddar corn potato fritters made with shredded potatoes, sweet corn, and cheese—perfect as a snack, side, or appetizer. Golden and crunchy outside, soft and cheesy inside.
Ingredients
– 2 cups shredded russet potatoes
– 1 cup sweet corn kernels
– 1 cup shredded sharp cheddar cheese
– ¼ cup chopped scallions
– 2 large eggs
– ⅓ cup all-purpose flour
– ½ tsp garlic powder
– ½ tsp salt
– ¼ tsp black pepper
– Optional: 2 tbsp Parmesan cheese, parsley, chives, or thyme
– Oil for frying
Instructions
1. Shred potatoes and squeeze out moisture.
2. Mix all ingredients in a large bowl.
3. Shape into ½-inch thick patties.
4. Heat oil in skillet, fry patties for 3–4 minutes per side.
5. Drain on paper towels.
6. Serve warm with your favorite dip
Notes
For extra crispiness, make sure potatoes are dry. Try variations with mozzarella, jalapeños, or fresh herbs. Can be baked for a healthier option. Refrigerate or freeze leftovers for easy meal prep.
