Description

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice zucchinis thinly and set aside.
  3. In one bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, and salt.
  4. Dip each zucchini slice in egg, then coat with the breadcrumb mixture.
  5. Place coated zucchini on a baking sheet and bake for 20-25 minutes until golden brown.
  6. For the basil mayo, combine mayonnaise and chopped fresh basil in a bowl.
