Ingredients

- 2 medium zucchinis
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 425°F (220°C).
- Slice zucchinis thinly and set aside.
- In one bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, and salt.
- Dip each zucchini slice in egg, then coat with the breadcrumb mixture.
- Place coated zucchini on a baking sheet and bake for 20-25 minutes until golden brown.
- For the basil mayo, combine mayonnaise and chopped fresh basil in a bowl.
- Serve zucchini chips with basil mayo for dipping.
Notes
- For extra crunch, try using panko breadcrumbs.
- Adjust seasoning to taste.
