- 2 cups heavy cream
- 1 cup whole milk
- 5 large egg yolks
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and milk over medium heat until it begins to simmer.
- In a bowl, whisk together egg yolks and granulated sugar until pale and creamy.
- Slowly add the hot cream mixture to the egg mixture, whisking continuously.
- Stir in the vanilla extract.
- Pour the mixture into ramekins.
- Place the ramekins in a baking dish and fill the dish with boiling water halfway up the sides of the ramekins.
- Bake for 30-35 minutes or until just set.
- Remove from the oven and let cool.
- Sprinkle the tops with brown sugar and use a torch to caramelize.
Notes
- For an extra touch, add a pinch of sea salt before caramelizing.
