- 1 pound chicken breast, diced
- 1 cup lentils
- 2 cups chicken broth
- 1 tablespoon curry powder
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and garlic, sauté until translucent.
- Add the diced chicken and cook until browned.
- Stir in the curry powder and cook for an additional minute.
- Add the lentils and chicken broth, bring to a boil.
- Reduce the heat and let simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper to taste before serving.

- For extra flavor, try adding coconut milk.
