- 2 pounds beef roast
- 4 slices turkey bacon
- 1 cup diced bell peppers
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the diced bell peppers, chopped onions, garlic, salt, and pepper in a bowl.
- Make an incision in the beef roast and stuff it with the vegetable mixture.
- Wrap the stuffed roast with turkey bacon and secure with toothpicks.
- Heat olive oil in a pan and sear the roast on all sides.
- Place the roast in a baking dish, add beef broth, and cover with foil.
- Bake in the oven for 2 hours, removing the foil for the last 30 minutes.
- Let the roast rest for 10 minutes before slicing and serving.
