Description

A delightful beef roast stuffed with turkey bacon and a variety of vegetables, perfect for a family dinner.


Ingredients

  • 2 pounds beef roast
  • 4 slices turkey bacon
  • 1 cup diced bell peppers
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup beef broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the diced bell peppers, chopped onions, garlic, salt, and pepper in a bowl.
  3. Make an incision in the beef roast and stuff it with the vegetable mixture.
  4. Wrap the stuffed roast with turkey bacon and secure with toothpicks.
  5. Heat olive oil in a pan and sear the roast on all sides.
  6. Place the roast in a baking dish, add beef broth, and cover with foil.
  7. Bake in the oven for 2 hours, removing the foil for the last 30 minutes.
  8. Let the roast rest for 10 minutes before slicing and serving.
