Description

A hearty, cheesy Dorito casserole loaded with seasoned ground beef, creamy soups, and crunchy chips—perfect for an easy weeknight dinner.


Ingredients

  • 1 bag (14 ounces) Nacho Cheese Doritos, party size
  • 2 pounds ground beef
  • 1 can (10¾ ounces) cheddar cheese soup
  • 1 can (10¾ ounces) cream of chicken soup
  • 1 can (12 ounces) evaporated milk
  • 1 can (4 ounces) diced green chilies
  • 23 cups Mexican cheese blend, shredded
  • 1 packet taco seasoning (optional)
  • Sour cream (optional topping)
  • Green onions, diced (optional topping)
  • Cherry tomatoes, sliced (optional topping)
  • Avocado or guacamole (optional topping)
  • Salsa (optional topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef. Break it apart with a spoon as it cooks. Drain excess fat.
  3. If using taco seasoning, stir it into the beef and cook for 1–2 more minutes.
  4. Add cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies. Stir to combine and heat until bubbling.
  5. Crush half of the Doritos and spread them evenly in the bottom of the prepared dish.
  6. Spoon half of the beef and sauce mixture over the chips. Top with 1 cup of shredded cheese.
  7. Add the remaining Doritos, followed by the rest of the beef mixture, and top with the remaining cheese.
  8. Bake for 20 minutes until the cheese is melted and the edges are bubbly.
  9. Let rest for 5 minutes before serving. Add desired toppings and serve hot.

Notes

  • Use ground turkey or plant-based crumbles for a lighter version.
  • Make ahead and refrigerate overnight—add fresh Doritos just before baking.
  • Spice it up with jalapeños or chipotle peppers for extra heat.
