Ingredients

1 box (3 oz) flavored gelatin (strawberry, lemon, or lime)

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

1/2 tsp baking powder

Pinch of salt

Instructions

Preheat Oven: Preheat to 350°F (175°C). Line a baking sheet with parchment paper.

Cream Butter & Sugar: In a bowl, cream butter and sugar until light and fluffy (2–3 minutes).

Add Wet Ingredients: Beat in the egg and vanilla extract.

Mix Dry Ingredients: In a separate bowl, whisk flour, gelatin, baking powder, and salt.
Gradually combine with the wet mixture to form a soft dough. -
Form Cookies: Roll tablespoon-sized dough into balls. Place on baking sheet and flatten slightly.
Sprinkle with decorative sugars if using. -
Bake: Bake for 8–10 minutes until edges are set. Centers should stay soft.

Cool & Decorate: Cool on the baking sheet for 5 mins, then transfer to wire rack.
Decorate with royal icing once cooled (optional).
