Description

These vibrant and chewy Jello cookies are perfect for Easter! Made with flavored gelatin, they offer a fun burst of color and fruity flavor. Soft in texture and easy to decorate, they’re a hit with kids and adults alike.


Ingredients

  • 1 box (3 oz) flavored gelatin (strawberry, lemon, or lime)

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • Pinch of salt

Optional for Decorating:

  • Colored sugar sprinkles

  • Easter-themed sprinkles

  • Royal icing (for piping)


Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Line a baking sheet with parchment paper.

  • Cream Butter & Sugar: In a bowl, cream butter and sugar until light and fluffy (2–3 minutes).

  • Add Wet Ingredients: Beat in the egg and vanilla extract.

  • Mix Dry Ingredients: In a separate bowl, whisk flour, gelatin, baking powder, and salt.
    Gradually combine with the wet mixture to form a soft dough.

  • Form Cookies: Roll tablespoon-sized dough into balls. Place on baking sheet and flatten slightly.
    Sprinkle with decorative sugars if using.

  • Bake: Bake for 8–10 minutes until edges are set. Centers should stay soft.

  • Cool & Decorate: Cool on the baking sheet for 5 mins, then transfer to wire rack.
    Decorate with royal icing once cooled (optional).


Notes

  • Use different gelatin flavors for a variety of pastel colors and fruity tastes.

  • Do not overbake – these cookies are meant to stay soft.

  • Add a fun twist by sandwiching two cookies with frosting for a cookie sandwich!
