- 4 pieces boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 cup chicken broth
- 2 tablespoons capers
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Begin by flattening the chicken breasts to an even thickness.
- Season the flour with salt and pepper, then dredge the chicken breasts in the flour.
- Heat olive oil in a large skillet over medium heat, and brown the chicken on both sides.
- Remove the chicken and set aside. In the same skillet, add lemon juice and chicken broth, scraping up any browned bits.
- Return the chicken to the skillet, add capers, and simmer until cooked through.
- Finish with chopped parsley before serving.
Notes
- For more flavor, marinate the chicken in lemon juice and garlic before cooking.
